Kimberly’s Quinoa Stuffing
This is a dead easy gluten free stuffing for your roast chicken.
Ingredients
- 1.5 Cups Quinoa
- 2.25 Cups Water
- 2 Tbsp Olive oil
- 1 tsp salt
- .5 Cup Green herbs Dill, parsley, coriander sage
- 1 Lemon Rind and juice
- .5 Onion Finely diced
- 1 handful Dried currants
- 1 handful Dried cranberries
- 1 handful Pine nuts
Instructions
- Cook the quinoa,salt and oil, in the water in a pot with a lid. Simmer very gently for ten minutes then turn the heat of and leave it for ten minutes.1.5 Cups Quinoa, 2.25 Cups Water, 2 Tbsp Olive oil, 1 tsp salt
- Put the quinoa in a large bowl and gently mix-in the remaining ingredients..5 Cup Green herbs, 1 Lemon, .5 Onion, 1 handful Dried currants, 1 handful Dried cranberries, 1 handful Pine nuts
